Onions filled with sausages and herbs
Very simple recipe.
You will need
* fresh medium sized onions (about 4 or 5).
* 1Lb of Agricola sausage
* sage and parsley (fresh!)
* 1 carrot or 1 bell pepper
* 1/2 cup cheddar cheese
* 1 teaspoon of Agricola Maple syrup
Step 1: boil onions until they are cooked but still firm (about 5 min)
Step 2:cut onions on the equator and break down so that you have many onion cups - leave so that you keep 2 lyers of skin per onion cup
You will need

* 1/2 cup cheddar cheese
* 1 teaspoon of Agricola Maple syrup

mince the carrot or cut the bell pepper in tiny pieces and saute with some oil on a skillet.
Add on the stove the sausage just for a quick minute. You want the sausage to be still raw before you place it in the onions. You mix your veggies and meat in the skillet to make sure the flavors blend together.
Preheat the oven to 275.
Take off the stove and add sage, parsley and maple syrup.
When it cooled off add the egg and half of the cheese and mix well.
Spoon the meat mix inside each onion cup and sprinkle the remaining cheese on top. Place in the oven for 15 or 20 min (meat is ready when temperature reached 135 F. Note that USDA suggests 145 F for pork).
