How to prepare our ravioli
use a very large pot with abundant water (a lot more water than you would think they need because they need to be able to jump around freely). Add salt (about a handful) in the water. When the water reaches a rolling boil it is the time to see if you got the skills necessary for your ravioli! All the ravioli need to be dropped into the water pretty much at the same time (get a team going if you have more than 5 portions to cook at once) without anyone getting splashed with hot water. Since they are very fresh some may be a little stuck to the surface of the paper so it may be important to inspect them ahead of time and make sure they are all ready to go.
Cook for 7 minutes. They are not necessarily ready when they start floating. Take one out to taste it and make sure there is no dry dough in the center (do not worry, I usually give people one extra so you will not mess up the count at the dinner table!).
Use one of those small strainers to scoop out the ravioli rather than dumping them in the strainer on top of sink.
After carefully giggling them to remove the cooking water place them in a serving bowl (or platter) where you have spread at least half of the sauce on the bottom. Poor the rest of the sauce on top and use wood spoons to mix it.

What not to do
The ravioli hate to be without sauce so place in the the sauce immediately after you strain them. They also hate to wait in the serving bowl ... they need to be eaten warm and ... alone; meaning: no other 300 side dishes on the plate and no attention to other 300 flavors eaten at the same time. So basically serve them in their own plate and at their own time. You can serve an appetizer before or just start with them before serving something else but do not place the salad of a meat dish in the same plate. Think of them as your primadonna at the dinner table, they want all your attention and want you to be focused on them and only them when they arrive at the table. After all ... you are the one who choose to have ravioli tonight!
