FARM-FRESH SALAME
Our hand-tied and cured salame is made using a traditional Italian recipe with pigs that we raise on our pastures. Each link is stuffed and tied by hand using old techniques and are then aged in our modern, state-of-the-art Italian curing cabinets. Salame ships everywhere in the US. |
PASTURED PORK SAUSAGE Our pork comes from pigs raised on pasture. We do all of our own meat cutting at our USDA-inspected facility. Right now we are are selling mostly sausages, the rest of the meat is transformed into cured meat. We make 3 types of sausages: Farm Fresh *our special recipe with mustard seeds, sage, garlic and a pinch of cayenne. Breakfast: VT maple syrup (just enough), garlic, black pepper and winter savory Piccante (moderately spicy): cayenne, sweet and hot pepper, oregano and fennel pollen |
PASTURED LAMB
Our lamb comes from our Icelandic sheep raised 100% on pasture. During the spring and summer our sheep work for Green Mountain Power to control the vegetation in their Panton Array solar Plant. When they are not "working" they graze our land and pretend to run the farm. We do all of our own meat cutting at our USDA-inspected facility. Lamb is sold mostly frozen. We butcher twice a year (spring and fall). We sell also full lambs ($15/Lb hanging weight). Email us for more details or to order a full lamb. |
HANDMADE PASTA (Spring ONLY)
Using eggs from our pastured hens and Kings Arthur's Flour, we make fresh tagliatelle and ravioli. They take about 4 to 5 minutes to cook and are made fresh on day of delivery. |

PASTURED CHICKENS
We only have a limited number of birds available this year. Our chickens are born on the farm an raised by hens. This makes a big difference in terms of their instinct to hunt, forage and protect themselves. For these reasons their meat tastes different. Chickens are in groups of 70 to 100 and are rotated daily on pastures. We supplement their diet with noGMO grains. Reserve your 2022 chicken in October - November.
