We started processing our own meat from the very beginning, in 2013, because we believe in the value of processing what you raise, raising what we process and overall enjoying each step of the process. This is why we went back to Italy to learn how to make cured meats and then spent an insane amount of time and lab testing to prove to USDA inspectors that our process gives us products that are wholesome and safe (something that in Italy has been acknowledged 2000 years ago). To some people, this may sound a bit excessive... but people passionate about food know exactly what i am talking about. And hey, it looks like people like it, not just us - we won the 2022 Good Food Award and were fnalists in 2024.
