We make our own Italian salame with pastured pork sourced from our farm. This traditional recipe uses just a few key spices and allows the flavor of the meat to come through, unadulterated. You will taste the flavors of our pastures, rich in wild edibles and native herbs. We age our salame for one month and pack it in links that are 3 to 7 oz each. Links are hand tied, so each is unique in size and shape. Our salame is shelf stable and does not need refrigeration but we do recommend keeping it refrigerated upon arrival and definitely after opening.
